Taco Salad

One of our favorite things to eat is Mexican food.     Lots of times we just go out to our favorite restaurant but I still don’t think you can beat the homemade version of my favorite….. Taco Salad.

Of course, there are many different ingredients you can use, but here’s what I use:

Ground beef

Fresh tomatoes

Grated extra sharp cheese

Lettace

Onion

Refried Beans

Nacho chips

Taco Sauce

1000 Island Dressing

Now that last ingredient (1000 Island Dressing) might surprise you….the first time I was introduced to it, I thought Yuck!    But to me, it just makes the salad.     

All I do is brown my ground beef (you could use ground  turkey), then drain off the grease.     Then just build your salad on your plate.    No matter how “small” you start out, this salad seems to grow on your plate.    I usually start with a bottom layer of lettace, then add the ground beef, then everything else, top it off with cheese,  salsa and chips.    I then drizzle the 1000 Island Dressing on top of everything, mix it up a little and dig in!    I promise you, this will become one of your favorite quick & easy recipes to fix when time is tight or you just want a little south-of-the-border meal.

I've never made this with 1000 Island. The recipe I have calls for calatina, but I love 1000 Island so I'll give it a go. Thanks for posting.

Sounds yummy! We like Mexican food too, and I usually make a Mexican casserole about once a week in winter.

Good Morning Judy. Wow, I just fixed some Taco's this past week. Me and hubby ended up making Taco Salads out of ours too. Instead of frying my hamburger meat, I boil mine and then drain and rinse it. Supppoed to be more cholesterol better that way. I have never tried the 1000 Island dressing on mine, but I may give it a try next time I make them. I love 1000 Island dressing myself and usually use it in a regular salad. We tried this for dinner last night.
Delicious!!
We substituted fajita strips for the hamburger, black beans for the refried and added Mexicorn.
I wouldn't of thought to add the 1000 Island dressing. I think this was the special touch.
