Hi All! I've been MIA again....just have a lot going on but hope to be back to blogging soon.
I'm on our class reunion committee and I am really enjoying connecting with old classmates. Our reunion isn't until June but a handful of us have met a time or two to firm up plans for the reunion and assign "tasks" and food....after all, it's all about the food!
Last night we met at the Country Club and had a spread of sandwich makings and salads. One of the salads was a pasta salad with small chunks of fruit....absolutely delicious! So today I goggled "pasta salad with fruit" (I'm smart that way!) and found one that looks and sounds identical to what I had last night. I wanted to share it with you in the event you are looking for something easy and good to eat this weekend...or really any time. I'm making a run to the grocery store later today to make one for us to enjoy.
Serves 6
You can adjust the recipe for your needs as far as how many you are serving. Since I haven't made this yet, I don't know if I will tweak the recipe or not....so keep in mind that you may need to make adjustments.
This sounds exactly like what I had and everyone loved it. I can't wait to give it a try!
One quick little decorating note: I have been looking to replace our jute rug in the den with another one as the one we have now is getting a little worn on one corner. I plan on putting the old one in the sun room and hide the worn corner under the TV cabinet. After finding out that Rugs USA was having a huge sale (75% off) on their rugs, I ordered a new jute rug for the den at a huge savings with free shipping! I think the sale is still going on....use Code MOMS75 at checkout. Here's the one I got:

An 8x10, regular price $759.00, sale price $189.75 with free shipping! Happy Mother's Day to me!
So if any of you are looking to get a great price on a rug, hop over to Rugs USA and check it out. I am not affiliated with Rugs USA and they don't even know I exist but I thought this sale was too good to keep to myself. I have bought rugs from Rugs USA before and they are a good quality.
Wishing all mothers a Happy Mother's Day this weekend!
